Vanilla is the cured seed pod of orchids in the genus Vanilla, typically long, thin, and dark brown. It delivers a warm, floral aroma with creamy, woody sweetness and gentle spice. Cooks split and scrape the oily, pliant pod to release seeds, then infuse batters, custards, syrups, and creams; it also comes as extract, paste, and powder for convenient dosing.
Native to Mesoamerica, vanilla was cultivated by the Totonac and adopted by the Aztec before spreading globally. Hand pollination discovered in the 19th century enabled production outside Mexico, and today Madagascar, Indonesia, and Uganda are major sources. Beans are harvested green, cured by sweating and drying, then conditioned to develop their characteristic aroma.
