Sunflower oil is a pale yellow vegetable oil pressed from sunflower seeds. It has a clean, faintly nutty aroma and a light body. Refined and high-oleic versions have neutral flavor and high heat tolerance, making them suitable for frying, sauteing, and baking. Cold-pressed bottles deliver more sunflower seed flavor for dressings and finishing.
The oil rose to prominence in Eastern Europe, especially Ukraine and Russia, before spreading to the Americas and global markets. Modern production uses pressing with refining or solvent extraction and deodorizing for stability, while cold-pressed oils are bottled for culinary character.
