Rendered tallow is purified beef fat that is solid and ivory when cool and clear when melted. It has a high smoke point and a clean beefy aroma, making it excellent for deep frying, searing, and roasting; cooks also use it for flaky pastry and savory frying mediums. Sold in jars, tubs, or blocks. It is animal-derived and not vegetarian.
Cooks have rendered tallow for centuries across Europe and the Americas, with strong traditions in British frying and pie making and in North and South American kitchens. It is produced by wet or dry rendering of beef fat trimmings and suet, and its culinary use persisted alongside uses in candles and soap before modern oils.
