Malt vinegar is a brown, grain-based vinegar made from fermented barley malt. It brings brisk acidity with a toasty, cereal-like note and commonly seasons fish and chips, quick pickles, chutneys, marinades, and punchy dressings. Sold at about 5% acidity in clear or brown glass bottles.
It developed in Britain from ale vinegar traditions and became a staple in chip shops. Makers ferment barley wort into beer, convert alcohol to acetic acid with Acetobacter, then mature the vinegar for rounded malt complexity.
