Red leaf lettuce is a loose, ruffled-headed lettuce with burgundy-tipped leaves and pale green cores. Leaves are tender with a mild, slightly bitter edge and a clean, watery snap; best used raw in salads, sandwiches, and as a soft bed for proteins, and sold as whole heads or loose leaves. It wilts quickly with heat and rough handling, so add just before serving.
Derived from Lactuca sativa, red-pigmented looseleaf types were selected in Europe and spread through market gardens. Today it is grown widely across North America in spring and fall field plantings and in protected culture for continuous supply.
