Raw kombucha is a lightly effervescent fermented tea with a cloudy, amber appearance. It tastes tart and lightly sweet with a gentle vinegary snap, and its fine bubbles make bright vinaigrettes, quick pickles, and refreshing mixers. Sold unpasteurized and unfiltered, it often carries a bit of sediment and a mild tea aroma.
The drink traces to Northeast Asia and traveled through Russia and Europe before modern craft versions spread globally. It ferments sweetened tea with a SCOBY (symbiotic culture of bacteria and yeast), which produces organic acids, a little carbonation, and trace alcohol.
