Quinoa is a small, disk-shaped seed with colors ranging from pale ivory to deep red and black. It cooks to a fluffy, slightly chewy texture with a nutty aroma; rinsing removes its natural saponin bitterness. It excels in pilafs, salads, grain bowls, and stuffings, and is sold as white, red, black, or tricolor blends, often pre-rinsed.
Domesticated in the Andean highlands thousands of years ago, quinoa was a staple of pre-Columbian agriculture. It spread globally in the late 20th century as a versatile pseudocereal and is now cultivated beyond South America, including North America and Europe, with varieties adapted to different climates.
