Prosecco is an Italian sparkling white wine with pale straw color and lively bubbles. It shows crisp acidity with green apple, pear, and white flower notes, works well in spritzes, mimosas, and quick pan sauces, and is sold mainly as brut, extra dry, or dry in 750 ml bottles. Some producers use animal-derived fining agents, so suitability for vegetarians varies.
Originating in the Veneto and Friuli regions of Italy, it expanded with the Charmat-Martinotti tank method that preserves fresh fruit character. It holds DOC and DOCG designations and is now exported globally for aperitivi and casual dining.
