Pisco is a clear, unaged grape brandy that ranges from water-white to faint straw. It shows perfumed grape and citrus aromas with a silky, slightly oily texture; flavors are clean and dry. Bartenders shake sours, build highballs, and stir spirit-forward drinks with it; it is sold as puro, acholado, or mosto verde at 38–48% ABV.\n\nDeveloped on Peru's south coast during the colonial era, it also has a long tradition in Chile, and both countries protect regional styles with Denominations of Origin. Producers distill fermented wine from approved grapes in small pot stills and rest the spirit in inert tanks rather than aging in wood, a practice that preserves the grape's aromatic character.
