Pink Lady apple is a firm, rosy-skinned dessert apple with creamy white flesh. It tastes bright and sweet-tart with a crisp snap, and it holds its shape when baked while browning moderately after cutting. Use for fresh eating, salads, tarts, galettes, and thin slices in sandwiches; typically sold as medium apples with a pink blush over green-yellow.
Breeders in Western Australia developed the Cripps Pink cultivar in the 1970s from Golden Delicious and Lady Williams; fruit meeting quality standards is marketed as Pink Lady. The variety spread across North America and Europe and is harvested late season, then kept in controlled-atmosphere storage to extend availability.
