Mezcal

Mezcal is a distilled agave spirit from Mexico, typically clear and bottled around 40–55% ABV. It shows pronounced smoke, earthy minerality, and green agave notes with an aroma of warm campfire; it is sipped neat or mixed in cocktails where a smoky, vegetal backbone shines, and common styles are joven (unaged), reposado (briefly aged), and añejo (longer aged).

Production concentrates in Oaxaca and other Denomination of Origin states, where agave piñas are pit-roasted, crushed, fermented, and pot-distilled. The spirit spread from regional Mexican traditions to global bar culture, featuring in modern classics across contemporary Mexican and cocktail cuisines.
