Matzo meal is a coarse to fine grind of unleavened matzo crackers, pale beige and sandy in texture. It tastes neutral and slightly toasty, absorbing liquid readily and giving mixtures a tender, cohesive bite. Cooks use it to bind matzo balls and meat mixtures, bread cutlets, thicken soups, and top casseroles; it comes in regular and finer 'cake' grinds.
