Lemongrass is a tall, pale-green stalk with a woody base and a citrusy aroma. The tender inner bulb tastes lemony with mild herbal warmth; cooks bruise or slice the stalk to release oils for soups, curries, and teas, then remove the fibrous pieces. Sold as fresh stalks, frozen sections, or pre-sliced rounds.
Native to Southeast Asia, it spread through Thai, Vietnamese, and Indonesian cuisines and is now cultivated across tropical and subtropical regions; commercial supply to North America comes largely from Asia, Central America, and hothouse growers.
