Fennel bulb is the crisp, pale-green swollen stem base of the fennel plant with layered ribs and feathery fronds. It offers a delicate anise-like aroma and sweet, crunchy flesh that turns silky when roasted or braised; commonly shaved in salads, sauteed for aromatic bases, or roasted in wedges, and sold either whole with fronds or as trimmed bulbs.
Cultivated from Florence fennel, it traces to the Mediterranean and is prominent in Italian and French cooking. It favors cool seasons and is harvested when the bulb swells above the soil, now grown widely beyond its Mediterranean origins.
