Dried hibiscus flower consists of the deep red, papery calyces of Hibiscus sabdariffa sold whole or cut. It tastes briskly tart with cranberry-like fruitiness and light floral notes, steeping into a tea that leaves a vivid ruby stain. Cooks brew it for teas and agua fresca, infuse syrups and cocktails, and use it to tint pickles and desserts.
Domesticated in West Africa, roselle spread through the Caribbean, Mexico, the Middle East, and South Asia, where it features in drinks such as karkade and sorrel. Calyces are harvested after flowering, then split and sun-dried or mechanically dried for storage and trade.
