A corn tortilla is a thin, round flatbread made from nixtamalized corn masa and cooked on a hot griddle. It is pliable when warm with a toasty corn aroma and a tender chew, and it performs well for tacos, enchiladas, quesadillas, and chilaquiles. Sold in 4–8 inch rounds, commonly yellow or white, it comes fresh or shelf-stable in stacks.
Originating in Mesoamerica, corn tortillas developed alongside nixtamalization and became a staple of Mexican cuisine. Today they are produced at home from fresh masa or industrially from masa harina, and their use has spread widely across North America.
