Chicken leg quarter is the hindquarter of the bird, consisting of the thigh, drumstick, and a small portion of back, typically bone-in and skin-on. Its dark meat stays juicy and tender, and the skin renders to a crackling finish when roasted or grilled. Well-suited to roasting, grilling, braising, smoking, and frying; often sold bone-in/skin-on family packs or broken into separate drumsticks and thighs.
Domesticated chickens originated in Southeast Asia and spread worldwide with agriculture and trade. Modern poultry processing popularized the leg quarter as an economical cut, featured in cuisines from American barbecue to Caribbean stews and many Asian grilled dishes.
