Amchur powder is a finely ground, beige-tan powder made from dried unripe mango. It delivers bright, mouthwatering tartness with subtle fruity notes and a faint resinous aroma. Cooks sprinkle it to brighten chaats, chutneys, and curries, or whisk it into marinades and spice blends where liquid acids would add unwanted moisture. Sold as a fine powder; a little goes a long way.
Originating in the Indian subcontinent, amchur developed as a way to preserve green mangoes for year-round souring. It features prominently in North Indian and Pakistani cuisines, especially in chaat masala and dry sabzis, with production traditionally involving sun-drying sliced unripe mango before grinding.
