Aleppo pepper flake is a coarsely crushed, deep red chile flake with a slightly oily sheen. It delivers moderate, slow-building heat with fruity, tangy, raisin-like notes and a soft chew. Use it to finish soups and salads, top breads and dips, or bloom briefly in oil for sauces and dressings. Sold as flakes, often lightly salted and oiled, sometimes labeled Aleppo-style pepper.
The pepper takes its name from Aleppo in northern Syria and is also grown in southeastern Turkey. It features prominently in Levantine and Turkish cooking, where fully ripe pods are sun-dried, partially deseeded, cured with salt and a touch of oil, then crushed into flakes.
