From mid-December through mid-March, citrus is at its sweetest and most aromatic. Kitchens lean into zest and juice to cut through rich winter fare, brighten salads, and lift seafood and poultry. Look for fruit that feels heavy for its size with vibrant, thin skin; zest before juicing and store citrus chilled. Try segmenting into supremes for clean, pith-free slices, candy peels for snacking, and simmer small-batch marmalade. Finish roasts and pastas with lemon zest, balance bitter greens with orange, and use lime to sharpen dressings, ceviche, and salsas.
