  • 4 plain rice cakes
  • 1/2 cup creamy peanut butterstirred until smooth
  • 2 tbsp honey
  • 1/2 tsp vanilla extract
  • 1/8 tsp fine sea salt
  • 1/4 cup semi-sweet chocolate chipsroughly chopped
  • 1 bananathinly sliced
  • 1/2 cup strawberrieshulled and thinly sliced (~7.5 medium strawberries)
  • 2 tbsp chopped roasted peanutsunsalted

Instructions

1. Stir the peanut butter in a small bowl until smooth and spreadable.

2. Add the honey, vanilla extract, and fine sea salt to the peanut butter and mix until fully combined and glossy.

3. Place the rice cakes on a work surface or platter in a single layer.

4. Spread about 2 tablespoons of the peanut butter mixture evenly over the top of each rice cake, going close to the edges.

5. Arrange the banana slices over two of the rice cakes, slightly overlapping them to cover the surface.

6. Arrange the strawberry slices over the remaining two rice cakes, slightly overlapping them to cover the surface.

7. Sprinkle the chopped chocolate chips evenly over all of the rice cakes so each one gets a light layer.

8. Sprinkle the chopped roasted peanuts over the tops for crunch.

9. Serve the peanut butter rice cake snacks immediately, or refrigerate them on a plate or tray for up to 1 hour to help the topping set before serving.
