Blue Cheese Dressing
Ingredients
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon white wine vinegar
- 1 clove garlic – finely grated
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper – freshly ground
- 4 ounces blue cheese – crumbled
- 1/4 cup buttermilk – cold
- 1 tablespoon chives – finely chopped

Instructions
1. In a medium bowl, whisk together the mayonnaise, sour cream, white wine vinegar, garlic, kosher salt, and black pepper until smooth.
2. Add the blue cheese and fold it in, mashing some of it against the bowl to create a creamy base while leaving some small chunks for texture.
3. Whisk in the cold buttermilk until the dressing is thick but pourable.
4. Stir in the chives.
5. Taste and adjust seasoning as needed.
6. Cover and refrigerate for at least 30 minutes to meld flavors. Stir before serving. Keeps refrigerated up to 5 days.
Blue cheese dressing is a creamy, tangy condiment studded with savory blue cheese crumbles. The balance of rich dairy and sharp acidity highlights the cheese’s peppery, salty bite while keeping the texture luxuriously smooth with just the right amount of chunk. It’s equally at home draped over a crisp wedge salad, tossed with greens, or served as a cool, bold dip alongside hot, spicy foods like Buffalo wings and veggie platters.
Rooted in American steakhouse and salad-bar culture, the dressing evolved from early 20th-century Roquefort dressings that featured crumbled French blue cheese in a mayonnaise-sour cream base. By mid-century it became a staple on iceberg wedge salads and later an essential dip for Buffalo wings, popularized after the 1960s. Today it remains a quintessential American dressing, adaptable in thickness and seasoned to showcase the cheese’s character.
