Zante currants are tiny, seedless dried grapes made from the Black Corinth variety, historically linked to the Greek island of Zakynthos (Zante). They are often called "currants" in baking, but unlike fresh red or black currants (Ribes), these are a type of raisin. Their flavor is intensely sweet with a tangy edge and concentrated grapey notes, and their small size distributes flavor evenly in doughs and mixes.

Beloved in British, Mediterranean, and Middle Eastern baking, zante currants appear in scones, hot cross buns, soda bread, fruitcakes, and mincemeat. They also add bright pops to pilafs, couscous, stuffings, and salads. For best results, briefly soak in warm tea, juice, or spirits to plump; pat dry before folding into batters. Store airtight in a cool, dark place to prevent drying and sugar crystallization.
