Yellow cornmeal is ground dried yellow corn with a coarse to fine texture and a sunny golden color. It tastes mildly sweet and corny, and it absorbs liquid steadily to lend grit and structure to batters, breads, and porridges such as polenta. Sold in fine, medium, and coarse grinds, in degermed or whole-grain forms.
Milled from maize domesticated in Mesoamerica, cornmeal became a staple across the Americas and later central to cooking in the Southern United States and northern Italy.
