Seedless tamarind is compressed brown tamarind pulp sold without seeds. It is sticky and pliable, dissolving into a deeply tart, dark-fruity infusion when soaked. Cooks strain the soaked pulp to make tamarind water for curries, chutneys, soups, and drinks; the blocks are commonly sold vacuum-packed.
