Puffed rice is a light, crisp cereal made by expanding rice grains with high heat. It has a whisper-light crunch and a clean, neutral taste that readily takes on seasonings; the pieces are irregular, white to off-white, and extremely airy. Common uses include chaat and snack mixes, binding sweets like ladoo, and quick breakfast bowls; it is sold loose in large bags or as compact bricks.
It originated in South Asia, where sand-roasting and later pressurized puffing produced the familiar expanded grains. Today it is widespread across India, Bangladesh, Nepal, and Sri Lanka, and appears worldwide in cereals and snack foods.
