Powdered fruit pectin is a fine, off-white powder extracted from apple pomace and citrus peels. It disperses into hot mixtures and, with sugar and acid, forms a firm, silky set for jams, jellies, and fruit fillings. Sold as rapid-set, classic, or universal types, it hydrates quickly and activates near a full boil.
Commercial pectin developed in early 20th-century Europe from citrus and apple processing byproducts and spread worldwide with industrial jam production. It remains standard in North American home canning and confectionery.
