Pistachio

A pistachio is a small, beige-shelled tree nut with a pale green to yellow kernel. It tastes mildly sweet and buttery with a soft crunch and roasts to a fragrant, toasty aroma. Use in pesto, pilafs, salads, pastries, and ice creams; sold in-shell or shelled, raw or roasted, salted or unsalted.\n\nDomesticated in West and Central Asia, pistachios spread through the Middle East and Mediterranean and are now grown commercially in Iran, Turkey, and the United States. Modern orchards harvest in late summer to early fall before roasting or packaging kernels for year-round distribution.
