Instant yeast is a highly active strain of Saccharomyces cerevisiae processed into fine, porous granules that hydrate quickly. Unlike active dry yeast, it can be mixed directly into flour without proofing, offering fast, reliable leavening for breads, pizza, rolls, and other yeasted doughs.
Because of its higher viable cell count and fine granulation, you typically use about 25% less instant yeast than active dry to achieve the same rise. Keep it cool and dry, measure by weight for consistency, and avoid direct contact with very hot liquids; sealed storage in the fridge or freezer significantly extends potency.
