Iceberg lettuce is a compact, pale-green head lettuce with tightly layered, crisp leaves. It has a mild, slightly sweet flavor and a snappy, watery crunch, and it holds well in wedges or shredded forms for salads, sandwiches, and tacos. Leaves separate cleanly and stay crisp when well chilled, making it ideal for lettuce cups and burger toppings. Sold as whole heads and in pre-shredded or bagged salad mixes.
Developed in the United States in the early twentieth century as a shipping-friendly crisphead type, iceberg became a staple in North American markets. It is produced year-round with seasonal shifts between California and Arizona and supplemental imports from Mexico, using vacuum cooling and refrigerated distribution.
