Gouda is a semi-hard cow's milk cheese with a smooth pale interior and a natural or waxed rind. Young wheels are creamy and mild with buttery, nutty notes, while aged wheels turn firm and caramel-sweet with occasional tyrosine crunch; it slices, grates, and melts well for sandwiches, burgers, sauces, bakes, and cheese boards. Many versions use animal rennet, so they are not vegetarian; cheeses made with microbial or vegetarian rennet are suitable for vegetarians.
Originating in the Netherlands and historically traded in the city of Gouda, this washed-curd cheese spread across Europe and worldwide. Producers brine and often wax wheels, with styles ranging from young (jong) to very aged (oude), including smoked varieties. It remains a staple of Dutch cuisine and is produced internationally.
