Dashi stock is a clear, pale-gold Japanese cooking stock. It offers a clean, oceanic aroma with gentle smokiness and a light, savory finish, extracting quickly from kombu kelp and katsuobushi shavings; it anchors miso soup, noodle broths, nimono, and chawanmushi, and is sold as fresh liquid, concentrate, or instant granules. Traditional versions include bonito; vegetarian variants based on kombu and shiitake also exist.
Developed in Japan, it underpins washoku across the country. Kombu from Hokkaido and katsuobushi from southern fisheries shaped regional styles, and instant granules appeared in the 20th century.
