Cognac is a grape brandy distilled from wine and aged in oak, amber to deep mahogany in color. It shows aromas of dried fruit, vanilla, and spice with a warm lingering finish, and is used to deglaze, flambe, enrich sauces, and anchor spirit-forward cocktails. Sold in VS, VSOP, and XO bottlings at around 40% ABV.
Originating in the Cognac region of western France, it is produced mainly from Ugni Blanc grapes, double-distilled in copper pot stills, then matured in French oak from Limousin or Troncais. It figures in French cuisine and classic cocktails and is exported worldwide.
