Bomba rice is a short-grain Spanish rice with round, pearly kernels. It absorbs abundant liquid yet stays distinct and slightly firm, making it ideal for paella and other dry rice dishes. The grains shed little surface starch, so broths remain clear and flavors concentrate. Typically sold as polished white rice.
Grown around Valencia and Murcia, especially in the Albufera and Calasparra regions, it descends from heirloom Mediterranean cultivars. It became the benchmark for Valencian paella and spread through Spanish cooking and export markets.
