Black mustard seed is a small, round, dark brown to near-black seed with a matte shell. It is intensely pungent and peppery; when heated in oil it pops and releases a nutty aroma, then mellows into earthy warmth. Cooks use it whole for tempering, in pickles and chutneys, or ground into spice blends; it is sold primarily as whole seeds and sometimes as coarse or fine grind.
Black mustard (Brassica nigra) originated around the Mediterranean and Western Asia and spread through Europe and South Asia. It is central to Indian, Pakistani, Bangladeshi, and Sri Lankan cooking, though modern agriculture favors brown mustard for easier harvesting.
