Agave syrup is a viscous, amber liquid sweetener made from the sap of agave plants. It tastes mildly caramel and clean, dissolves quickly in cold liquids, and flows in slow ribbons. Heat-stable and neutral in flavor, it suits beverages, baking, dressings, and glazes, and is sold as light, amber, or dark grades.
Produced commercially in Mexico, especially from blue agave, it rose to global use in the late twentieth century. Processing concentrates filtered sap into syrup, with color and flavor adjusted by controlled heating.
