Mud Pie
Ingredients
- 24 cookies chocolate sandwich cookies – finely ground into crumbs
- 6 tbsp unsalted butter – melted
- 6 ounces semisweet chocolate – chopped
- 6 tbsp unsalted butter – cut into pieces
- 3/4 cup granulated sugar
- 1/4 cup unsweetened cocoa powder – sifted
- 1/4 tsp fine salt
- 3 large large eggs – at room temperature
- 1/2 cup heavy cream
- 2 tsp vanilla extract
- 1 cup heavy cream – cold (for topping)
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- dark chocolate – shaved (for serving)

Instructions
1. Heat the oven to 350°F (175°C). Set a 9-inch pie plate on a baking sheet.
2. Make the crust: In a bowl, combine the finely ground chocolate sandwich cookies with 6 tbsp melted unsalted butter until evenly moistened. Press firmly into the bottom and up the sides of the pie plate. Bake until fragrant and set, 10 minutes. Cool on a rack for 10 minutes.
3. Make the filling base: In a heatproof bowl set over gently simmering water (or in the microwave in 20-second bursts), melt 6 oz semisweet chocolate with 6 tbsp unsalted butter (cut into pieces), stirring until smooth. Remove from heat and let cool 5 minutes.
4. In a separate bowl, whisk 3 large eggs until blended. Whisk in 0.75 cup granulated sugar, then sift in 0.25 cup unsweetened cocoa powder and 0.25 tsp fine salt; whisk until smooth.
5. Slowly whisk the warm chocolate-butter mixture into the egg mixture until combined. Whisk in 0.5 cup heavy cream and 2 tsp vanilla extract until glossy.
6. Pour the filling into the crust. Bake at 350°F until the edges are set and the center still jiggles slightly when nudged, 20–25 minutes; a toothpick inserted 1 inch from the center should come out with a few moist crumbs, not wet batter.
7. Cool on a rack until barely warm, about 1 hour, then chill uncovered until cold and fully set, 2 hours.
8. Topping: In a chilled bowl, whip 1 cup cold heavy cream with 2 tbsp powdered sugar and 0.5 tsp vanilla extract to soft peaks, 2–3 minutes.
9. Spread the whipped cream over the chilled pie. Garnish with dark chocolate shaved. Slice with a warm knife and serve.
Mud pie, commonly known as Mississippi mud pie, is a richly layered chocolate dessert with a crumbly chocolate cookie crust, a dense, fudgy chocolate filling, and a cool blanket of whipped cream on top. The textures move from crisp to silky to airy, giving deep cocoa notes without being one-dimensional. It’s indulgent and celebratory, the kind of pie that satisfies a serious chocolate craving and slices cleanly while still feeling plush and decadent.
The pie likely draws its name from the thick, dark sediment of the Mississippi River, and it emerged in the American South during the mid-20th century as diner fare and potluck favorite. Over time, households and bakeries introduced variations—some more brownie-like, others closer to a baked chocolate custard—while keeping the essential trio of chocolate crust, fudgy center, and creamy topping. Today it stands as a nostalgic classic of American baking, beloved for its bold chocolate flavor and make-ahead friendliness.
