Ingredients

  • 4 cups mixed berries
  • 1 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 3 cups plain Greek yogurt
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 2 cups granola
  • mint leavesfor serving

Instructions

1. In a mixing bowl, gently combine the mixed berries with the granulated sugar and lemon juice; toss lightly and let stand 10 minutes until glossy and juicy.

2. In a separate bowl, whisk the plain Greek yogurt with the honey and vanilla extract until smooth.

3. To assemble, divide the granola among 4 clear glasses, spoon in a layer of the yogurt mixture, then add a layer of the macerated fruit with some of its juices. Repeat to fill the glasses, finishing with fruit on top.

4. Garnish with mint leaves and serve right away, or chill up to 1 hour if you prefer the granola to soften slightly.
