Blanched and cut almonds retain the fat and protein of whole almonds; removing the skins slightly lowers fiber. Flavor and weight remain comparable to whole almonds.

Slivered almond is a blanched almond cut into thin stick-like pieces. It is pale cream in color with a crisp snap and gentle, buttery nuttiness; it toasts quickly to a fragrant golden brown. Commonly used to top salads, pilafs, and desserts or folded into batters and granolas. Sold raw or roasted, most often unsalted.
Almonds were domesticated in Southwest Asia and spread through the Mediterranean before large-scale cultivation took root in California. Modern slivered almonds are produced by blanching to remove skins, then mechanically cutting kernels into uniform sticks for baking and garnish markets.
