Pectin is a plant-derived gelling polysaccharide sold as a fine off-white powder or as a clear liquid. In the presence of sugar and acid it forms a clean, glassy gel, setting jams and jellies; low-methoxyl types gel with calcium for low-sugar recipes. It also stabilizes fruit fillings, glazes, and confectionery gels, and is available in rapid- and slow-set formulations.
Commercial pectin is extracted chiefly from citrus peels and apple pomace, a practice standardized in the early 20th century. It underpins traditional preserves across European and North American cuisines and is now used globally in home canning and pastry production.
