Absinthe is a high-proof anise-flavored spirit distilled with wormwood, often emerald green or clear. It smells of licorice and crushed herbs and turns cloudy (louche) when diluted with water. Use it for cocktail rinses, measured pours, classic drips over a sugar cube, or flambe aromatics and syrups.
Developed in 18th-century Switzerland, it gained fame in 19th-century France before a modern revival worldwide. Producers macerate botanicals such as wormwood, green anise, and fennel in neutral spirit, redistill, and optionally color with herb infusions (verte) or leave it clear (blanche).
