Baseline recipes for home kitchens

About RoughChop

RoughChop is a reference cookbook for classic dishes: from-scratch baselines that help you understand what a dish is and how to cook it well at home.

📖From-scratch, no shortcuts-first🔁Refined by real cook feedback

What RoughChop is

RoughChop focuses on one dependable version of each classic dish: a baseline built from the ingredients and methods that show up again and again across respected recipes.

Core ingredients. Best methods. That’s the formula behind every baseline.

  • One baseline per dish: a reliable starting point shaped by many strong versions.
  • From-scratch at the core: the default approach is the real thing, not the shortcut version.
  • Written for home cooks: clear steps, sensible timing, and practical guidance.

One great go-to recipe

For almost any dish, the internet gives you dozens of “best ever” recipes with conflicting ingredients, steps, and opinions. RoughChop exists to cut through that noise and give you one dependable baseline you can trust.

A baseline is the core version of a dish: the ingredients, methods, and structure that make it recognizable, balanced, and worth learning.

The goal is not to reinvent classic dishes, but to make them easier to cook, understand, and build from — whether you are just getting started or returning to a favorite with fresh eyes.

Learn your favorites. Discover what’s next.

RoughChop is built to help you cook the foods you already love — the dishes you crave, the ones you order out, the ones you grew up with — and make them feel approachable in your own kitchen.

Once you have a dependable baseline, it becomes easier to branch out. You start to recognize patterns — how flavor is built, how timing works, how ingredients behave — and new cuisines feel less intimidating.

At the same time, RoughChop is designed to help you plan meals, use what you buy, and waste less — so cooking at home becomes a realistic, affordable habit instead of a special project.

How we create recipes

RoughChop baselines are built around two things: core ingredients and the best methods. We review many respected versions of a dish, identify what consistently defines it, and distill the most reliable techniques and ratios into one balanced baseline. From there, we refine for clarity and real-world timing through cook feedback.

1

Review many great recipes

We start by reading broadly: trusted online recipes, classic references, and regional approaches. The goal is to understand what defines the dish—its core flavors, technique, and structure.

2

Distill the common core

We identify the most commonly used ingredients and methods across sources: the “must-haves,” the typical sequence of steps, and the ratios that keep showing up. Outliers and gimmicks don’t become the baseline.

3

Publish, then refine to 5-star

We write the baseline as a clear, from-scratch recipe, then we use Chop Ratings and targeted notes from home and professional cooks to tighten clarity, tune amounts, and correct timing—so the recipe gets better every time it’s cooked.

The long-term mission is simple: a reliable, delicious, five-star baseline recipe for every classic dish—across cuisines and regions worldwide.

Feedback & refinement

After every cook, we invite a quick Chop Rating and targeted notes (or step-by-step suggestions in Refine). This isn’t vanity feedback—it’s how we tighten times, clarify steps, and tune amounts.

Over time, that feedback loop pushes each recipe toward a dependable, “I know this will work” baseline—the version you bookmark and come back to.

What we listen for

  • Timing reality checks: “This took longer to brown” or “pasta was done early.”
  • Clarity notes: steps that felt vague or where a photo/description would help.
  • Flavor balance: too salty, too mild, not enough acid, etc.

The goal isn’t endless tweaks—it’s to converge on one recipe per dish that feels like “this is the way I’ll make this from now on.”

Pantry

Add the ingredients you actually keep on hand, and RoughChop will suggest baseline recipes that fit your pantry first—with a tight list of what’s missing. Your pantry will be preloaded with common kitchen staples.

The goal: cook tonight with what you have, surface smart swaps when appropriate, and learn which staples give you the most range across cuisines.
