
Del El Paso Tostada Salad
Ingredients
- 2 avocado - mashed
- 1 T lime juice
- 1 T green onion - thinly sliced
- 0.25 C sour cream
- 0.25 C Del El Paso taco sauce
- 0.5 salt
- 1 tsp. cooking oil
- 1 16 oz. can refried beans
- 0.5 C cheddar cheese - shredded
- 6 Del El Paso tostada shells
- 3 Cups lettuce - shredded
- 1 C tomato - chopped
- 6 slices avocado - sliced
Instructions
- 1. In a bowl, mix the mashed avocados, lime juice, and thinly sliced green onion.
- 2. Blend in the sour cream, Del El Paso taco sauce, and salt; chill the avocado dressing.
- 3. Heat the refried beans in the cooking oil until warmed through, then stir in the shredded cheddar cheese until melted.
- 4. Heat the tostada shells. On each heated shell, divide and spread the beans, then top with shredded lettuce and chopped tomato.
- 5. Spoon the avocado dressing over each tostada salad and top with avocado slices.
