1 clove garlic – finely grated or mashed to a paste
0.25 cup lemon juice – freshly squeezed
0.5 tsp kosher salt
0.5 cup tahini – well-stirred
0.5 cup water – ice-cold, divided as needed
Instructions
In a medium bowl, combine the grated garlic, lemon juice, and kosher salt. Let sit 1 minute to mellow the garlic.
Add the tahini and whisk until the mixture seizes and thickens into a paste.
Gradually whisk in 0.25 cup of the ice-cold water until smooth and creamy. Continue adding more cold water 1 tablespoon at a time until the dressing is pourable and clings in light ribbons, using up to the remaining 0.25 cup as needed.
Taste and adjust with a pinch more salt or a squeeze more lemon if desired.
Use immediately or refrigerate in a sealed jar up to 1 week. The dressing will thicken when chilled; thin with a splash of cold water and whisk before serving.
