Ingredients
- 1 ripe avocado – halved, pitted, and peeled
- 1 teaspoon fresh lemon juice

- 4 plain rice cakes
- 2 teaspoons everything bagel seasoning

Instructions
- Place the avocado in a small bowl and mash it with a fork until mostly smooth with some small chunks remaining.
- Add the lemon juice, kosher salt, and extra-virgin olive oil to the mashed avocado and stir until well combined and creamy.
- Lay the rice cakes on a plate or serving board in a single layer.
- Divide the avocado mixture evenly among the rice cakes and spread it to the edges in an even layer.
- Sprinkle the everything bagel seasoning evenly over the avocado on each rice cake.
- Finish with a light sprinkle of freshly ground black pepper over the tops.
- Serve the rice cakes immediately while the rice cakes are crisp.
