0.5 cup creamy peanut butter – stirred until smooth
0.5 cup strawberry jam
Instructions
Place the slices of soft sandwich bread on a cutting board in a single layer and remove the crusts with a sharp knife.
Working with one slice at a time, gently roll the bread with a rolling pin to flatten it to about 0.25 inch thick, taking care not to tear it.
Spread about 1 tablespoon of creamy peanut butter evenly over each slice of flattened bread, going almost to the edges.
Spread about 1 tablespoon of strawberry jam over the peanut butter on each slice, leaving a narrow 0.25 inch border along one long edge to help seal the roll.
Starting from the long edge opposite the border, roll each slice up tightly into a neat log, pressing gently along the seam to seal.
Using a sharp knife, trim the very ends of each log if uneven, then cut each log into 4 equal bite-size pieces using a gentle sawing motion.
Arrange the peanut butter and jelly sandwich bites cut-side up on a plate and serve immediately, or refrigerate in a covered container for up to 4 hours before serving.
