Ingredients
- 1 tbsp unsalted butter – for greasing pan
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 0.33 cup granulated sugar
- 1 tbsp baking powder
- 0.75 tsp kosher salt
- 1 cup whole milk
- 2 eggs large eggs
- 6 tbsp unsalted butter – melted, cooled slightly
Instructions
- Heat the oven to 400°F with a rack in the center.
- Grease an 8-inch square (or 9-inch round) baking pan with the 1 tbsp unsalted butter.
- In a large bowl, whisk together the all-purpose flour, yellow cornmeal, granulated sugar, baking powder, and kosher salt until evenly combined.
- In a separate bowl, whisk the whole milk and large eggs until smooth, then whisk in the 6 tbsp melted unsalted butter.
- Pour the wet ingredients into the dry and stir just until combined; the batter should be thick and slightly lumpy. Let sit 5 minutes to hydrate.
- Scrape the batter into the prepared pan and smooth the top.
- Bake until the top is golden and a toothpick inserted in the center comes out clean or with a few moist crumbs, 20–25 minutes.
- Cool in the pan for 10 minutes, then cut into 9 squares and serve warm.
