Instructions

  1. Rinse and trim the cucumber, then thinly slice; reserve a few slices for serving.
  2. Put the remaining slices in a large pitcher and add the water.
  3. Cover and refrigerate 2–12 hours until the water smells fragrant and tastes crisp; 2 hours yields a light flavor, 4–8 hours a fuller infusion.
  4. Strain out the solids once infused (no later than 12 hours) to avoid bitterness, then return the liquid to the pitcher and keep chilled.
  5. Fill glasses with the ice cubes, pour, and add the reserved slices. Serve cold.
