  1. Lay the flour tortillas flat on a clean work surface.
  2. Spread about 2 tablespoons of peanut butter evenly over each tortilla, leaving a small 0.5-inch border around the edges.
  3. Drizzle a light amount of honey over the peanut butter on each tortilla if using, then lightly sprinkle with ground cinnamon.
  4. Cut each banana in half crosswise so you have 4 short pieces in total.
  5. Place one banana piece along the edge of each tortilla closest to you.
  6. Roll each tortilla up tightly around the banana, tucking the sides slightly as you go to help keep the filling inside.
  7. Place each roll seam-side down and use a sharp knife to slice into bite-size rounds, about 1 inch thick, or leave whole as a handheld roll up.
  8. Serve immediately, or cover and refrigerate for up to 4 hours before serving.
