Rinse the apples under cool water and dry them with a clean towel.
Core the apples, then cut each apple into 8–10 even wedges.
Place the apple wedges in a medium bowl and drizzle with the lemon juice. Toss gently to coat so the slices stay crisp and do not brown quickly.
In a small bowl, add the peanut butter and stir until smooth and spreadable. If using, stir the honey into the peanut butter until fully combined.
Sprinkle the ground cinnamon over the apple wedges and toss lightly to distribute.
Arrange the cinnamon-dusted apple slices on a plate.
Spoon the peanut butter into a small serving bowl and place it in the center of the plate, or spread a thin layer of peanut butter directly onto each apple slice.
Serve the apple slices with peanut butter immediately, or cover and refrigerate for up to 2 hours before serving.
